Default Maharini Chicken

This is a combination of butter chicken with additional nuts, fruit, etc. Feel free to add or subtract. If I am in a hurry, I use Costco's butter chicken sauce. I also used tubed ginger, cilantro and garlic, but you can chop them fresh.

1-2 tblsp minced garlic
1-2 tblsp minced ginger
1/4 c. minced cilantro
3 tblsp neutral oil

Fry these together with salt and black pepper.

2 tblsp masala or curry powder
1 finely chopped onion

Fry until just barely brown

1 c. cashews
1/4 - 1/3 c. sultanas (golden raisins)

Fry under low heat for about 5 min.

1-2 lb chicken chicken cut into bite-sized pieces

Fry at medium heat for 5 min

1 c coconut milk
2 c yoghurt
1/4 c ground almonds (can be omitted)

Correct seasoning and add masala as needed.

Lower heat to simmer and cook for approx 30 min. 10 min prior to serving add:

1-2 c. fresh or fresh-frozen baby peas.

Add fresh chopped cilantro (coriander) just prior to serving. Even better day 2-3.

Serve with rice, raita and naan.

That's a really nice recipe, thank you. I adore Indian food and cook it all the time. Here's a recipe for Keema that's easy and really good:

Keema Matar - Ground Lamb with Tomatoes and Peas

1 sm onion -- coarsely chopped
2 inch piece fresh ginger root -- coarsely chopped
1/4 c vegetable oil
1/2 tsp cumin seeds
1 tsp coriander seed
1/2 tsp ground turmeric
1 med tomato, about 7 oz -- chopped
1/4 c plain yogurt
1 1/4 lbs ground lamb
1 1/4 tsps salt
2 tsps garam masala
2 tbsps fresh lemon juice
1 fresh hot green chili -- chopped with seeds
6 tbsps fresh cilantro
1 c peas, fresh or frozen

Put onion, finger, and garlic into container of food processor and chop
finely. Put the oil in wide nonstick pan and set over medium-high heat.
When oil is hot put in onion, ginger and garlic mixture. Stir and fry
until it is somewhat brown. Put in cayenne , cumin seeds coriander seeds
and turmeric, Stir one or twice. Mow put in the tomato and yogurt, Stir
on high heat until the tomato is soft. Put in meat. salt and garam
masala. Stir, breaking up any lumps, for 2 minutes. Put in 1 cup water.
Stir and bring to simmer. Cover and turn heat to low and simmer for 25
minutes. Add lemon juice. green chili, cilantro and peas. Stir and bring
back to a simmer. Cover and cook on low heat for 10 minutes.
